Our Cream Oyster Gratin received the Grand Prize in the Convenience Food Category at the Korea Food Awards. It was an unexpected result for us that a convenience food product made by an oyster processing company received the Grand Prize in this category.

The Cream Oyster Gratin was developed in collaboration with Chef Kim Sang-hoon of Italian Table. It contains 30% Tongyeong oysters and is designed to be ready in 3 minutes and 20 seconds in the microwave. While adding this much oyster increases the cost, we believed there was no point in making a gratin where oysters are the star if we reduced the oyster content. For the sauce, we aimed for the flavor served by the chef in his restaurant, and it took time to adjust the blend to achieve the same taste in a factory setting.

We plan to expand the gratin line to include shrimp and scallops. Although the award was given for a single gratin product, we interpret it as confirmation that our direction to create processed foods beyond raw oysters is correct.
